2 Stage Knife Sharpening System - Priority Chef's professionally designed advanced knife sharpener has 2 stages that can transform any straight edged knife to a new level of sharpness that almost any professional chef would be proud of. Stage 1 uses Tungsten carbide blades and should only be used for the dullest of blades. Around 3-4 pulls through this section will prepare your knife shape for the the next step. Stage 2 uses 2 ceramic wheels that will give your knife a high quality finish and a razor like edge.

When I was growing up, my dad would always break out the sharpening rod, and run his knife back and forth against it, while having family discussions and just hanging out. He did this before cooking and I'd never thought much of it. As an adult, I realize that I own knives and use them in cooking, but I never sharpen them.
I've have a couple choice favorites, like a particular paring knife that is starting to dull. When given the opportunity to try this knife sharpener out, I went straight to that paring knife to try it out. It is so simple to use. For really dull knives, you run the knife along Stage 1 which is made of a tungsten carbide blade. Otherwise, go straight to Stage 2, which is made of ceramic wheels. You pull your knife through until you feel your knife is at the perfect sharpness.
The knife sharpener is lightweight but has a handle and grip designed that you can press down toward the counter without any effort while passing your knife through the sharpener. It has a foam bottom which keeps it from slipping.
I now use this regularly to sharpen my knives before cooking. It is sooooo nice to have a nice sharp blade to work with.
